Cheddar matured in the depths of a Welsh Slate Mine
South Caernarfon Creameries were inspired to develop a signature cheese that enhanced their great Welsh Cheddar and make something truly delicious and different. Welsh Slate Aged Cavern Cheddar has true provenance and its story is steeped in Welsh heritage. Made from Welsh milk, this authentic Welsh Cheddar, which is packed in the Creameries’ Dragon brand, has been developed in partnership with Llechwedd Slates Caverns.
The Dragon Welsh Slate Aged Cavern Cheddar is made to a bespoke recipe and matured to a minimum of eleven months. It is then transported from the Creameries’ Chwilog base to the Slate Cavern in Blaenau Ffestiniog where it is left to mature 500 feet underground. This traditional ageing process takes place in original mining caverns which have been converted into cheese caves, believed to be the steepest mining maturation caverns. This process adds unique characteristics to the taste and texture of the cheese with a firmer body and depth of flavour that has rich savoury flinty notes. As the Slate Aged Cavern Cheddar has a distinct, mature flavour it has a fabulous eating quality so is perfect for a cheeseboard or to use in cooking and is especially recommended served with charcoal crackers or walnut bread with a sweet onion chutney and glass of Welsh Ale!
The cheese is presented in a 200g pack and 1.2kg waxed deli block under South Caernarfon Creameries’ own Dragon brand and is available to buy at local Welsh retailers RRP from £2.99.
